Cheesy Ground Beef Enchiladas are a flavorful and satisfying dinner option, featuring seasoned ground beef, black beans, and plenty of cheese wrapped in soft tortillas and baked to perfection.

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) enchilada sauce
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream (for serving)
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  3. Stir in the chili powder, cumin, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
  4. Add the black beans and half of the enchilada sauce to the skillet, mixing well. Remove from heat.
  5. Spread a thin layer of the remaining enchilada sauce on the bottom of a 9×13 inch baking dish.
  6. To assemble the enchiladas, spoon about 1/4 cup of the beef mixture onto each tortilla, sprinkle with a little cheese, and roll them up tightly. Place the rolled tortillas seam-side down in the baking dish.
  7. Pour the remaining enchilada sauce over the top of the rolled tortillas and sprinkle with the remaining cheese.
  8. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Let the enchiladas cool for a few minutes before serving. Top with sour cream and cilantro.

Notes

  • For a spicier kick, add diced jalapeños to the beef mixture or use a spicy enchilada sauce.
  • Substitute ground turkey or chicken for a leaner option, or use a meat alternative for a vegetarian version.
