A simple yet delicious one-pot meal featuring ground beef, baby potatoes, and melted cheddar cheese.

  • 1 pound ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cups baby potatoes, halved
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup frozen peas
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  1. In a large pot or skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  2. Add the ground beef to the pot, breaking it apart with a spatula. Season with salt, black pepper, garlic powder, and onion powder. Cook until the beef is browned, about 5-7 minutes.
  3. Stir in the halved baby potatoes and beef broth. Bring to a simmer, cover, and cook for 15-20 minutes, or until the potatoes are tender.
  4. Once the potatoes are cooked, stir in the frozen peas and half of the shredded cheddar cheese. Cook for an additional 3-5 minutes until the cheese is melted and the peas are heated through.
  5. Remove from heat and sprinkle the remaining cheddar cheese on top. Cover for a few minutes until the cheese is melted. Garnish with fresh parsley if desired.

Notes

  • For a spicier kick, add a teaspoon of red pepper flakes or a diced jalapeño when cooking the onions.
  • Substitute ground turkey or chicken for a leaner option, and consider adding other vegetables like bell peppers or carrots for extra nutrition.
