3 to 4 pounds beef chuck roast
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
4 carrots, peeled and cut into 2-inch pieces
3 stalks celery, cut into 2-inch pieces
2 cups apple cider
1 cup beef broth
2 tablespoons tomato paste
2 teaspoons dried thyme
2 teaspoons dried rosemary
Salt and pepper to taste
2 bay leaves
Instructions
Preheat your oven to 300°F.
In a large Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear it in the hot oil until browned on all sides, about 4-5 minutes per side. Remove the roast and set aside.
