Cranberry Balsamic Roast Beef is a flavorful dish that combines the tartness of cranberries with the richness of balsamic vinegar, creating a delicious roast perfect for any occasion.

  • 2 to 3 pounds beef roast (chuck or sirloin)
  • 1 cup fresh or frozen cranberries
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the cranberries, balsamic vinegar, brown sugar, soy sauce, Dijon mustard, garlic powder, onion powder, black pepper, and salt. Mix well to create the marinade.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the beef roast on all sides until browned, about 3-4 minutes per side.
  4. Remove the beef from the skillet and set aside. In the same skillet, add the sliced onion and sauté until softened, about 3-5 minutes.
  5. Return the beef to the skillet and pour the cranberry balsamic marinade over the top. Add the beef broth to the skillet.
  6. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Roast for 2 to 3 hours, or until the beef is tender and reaches your desired doneness.
  7. Once cooked, remove the roast from the oven and let it rest for 10-15 minutes before slicing. Serve with the pan juices drizzled over the top.

Notes

  • For a sweeter glaze, add an extra tablespoon of brown sugar or honey to the marinade.
  • Serve the roast with mashed potatoes or roasted vegetables for a complete meal.
