A delicious and creamy salmon dish served with spinach and Parmesan cheese, perfect over pasta or rice.

  • 2 tablespoons olive oil
  • 1 pound salmon fillets, skinless
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooked pasta or rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the salmon fillets with salt and black pepper. Add the salmon to the skillet and cook for about 4-5 minutes on each side, or until cooked through. Remove the salmon from the skillet and set aside.
  2. In the same skillet, add the chopped spinach and minced garlic. Sauté for 2-3 minutes until the spinach is wilted.
  3. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, lemon juice, and red pepper flakes (if using). Cook for another 2-3 minutes until the sauce thickens slightly.
  4. Flake the cooked salmon into bite-sized pieces and gently fold it into the creamy sauce.
  5. Serve the salmon florentine over cooked pasta or rice, garnished with additional Parmesan cheese if desired.

Notes

  • For a lighter version, substitute half of the heavy cream with low-fat milk or a dairy-free alternative.
  • Add sun-dried tomatoes or artichoke hearts for extra flavor and texture.
