2 medium zucchinis, spiralized into noodles
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, season with garlic powder, salt, and pepper, and cook until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, pour in the heavy cream and bring it to a gentle simmer. Stir in the Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is creamy.
Add the spiralized zucchini noodles to the skillet and toss them in the sauce. Cook for 2-3 minutes until the noodles are tender but still slightly firm.
Return the cooked chicken to the skillet and mix well to combine everything. Cook for an additional minute to heat through.
Serve immediately, garnished with fresh parsley.
Notes
For a lighter version, substitute half-and-half for heavy cream.
