2 pounds boneless, skinless chicken breasts
1 tablespoon olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
1 can (14.5 ounces) diced tomatoes, undrained
1 cup fresh mozzarella cheese, shredded
1/4 cup fresh basil leaves, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
In a large oven-safe skillet, heat the olive oil over medium heat.
Season the chicken breasts with salt, pepper, oregano, and basil. Add them to the skillet and sear for about 5 minutes on each side, until golden brown.
Add the minced garlic to the skillet and cook for an additional minute, stirring frequently to avoid burning.
Pour the diced tomatoes (with their juice) over the chicken in the skillet.
Sprinkle the shredded mozzarella cheese evenly over the top.
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
Remove from the oven and let it rest for 5 minutes. Garnish with fresh basil before serving.
Notes
For added flavor, marinate the chicken in olive oil, garlic, and herbs for at least 30 minutes before cooking.
Substitute the mozzarella with provolone or fontina cheese for a different taste.
