2 large chicken breasts (about 1 pound)
1 cup fresh pineapple, diced
1 cup ripe mango, diced
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Juice of 1 lime
Fresh cilantro, for garnish
Instructions
Preheat your grill to medium-high heat.
In a medium bowl, combine the diced pineapple, diced mango, soy sauce, honey, olive oil, minced garlic, ground ginger, black pepper, red pepper flakes (if using), and lime juice. Mix well to create a marinade.
Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour half of the marinade over the chicken, ensuring it is well coated. Reserve the other half for basting and serving.
Marinate the chicken in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Remove the chicken from the marinade and discard the used marinade. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
During the last few minutes of grilling, brush the reserved marinade over the chicken for added flavor.
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Serve the grilled chicken topped with the remaining fresh pineapple and mango mixture. Garnish with fresh cilantro.
Notes
For a smoky flavor, add some smoked paprika to the marinade or use a charcoal grill.
Substitute the chicken with shrimp or tofu for a different protein option. Adjust grilling time accordingly.
