2 to 3 pounds beef chuck roast
2 tablespoons olive oil
1 large onion, chopped
2 carrots, sliced
2 celery stalks, sliced
4 cloves garlic, minced
1 cup red wine
1 cup beef broth
1 (14.5-ounce) can diced tomatoes
2 teaspoons dried oregano
1 teaspoon dried basil
1 teaspoon salt
½ teaspoon black pepper
2 bay leaves
Fresh parsley, chopped (for garnish)
Instructions
In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it in the hot oil until browned on all sides, about 4-5 minutes per side. Remove the roast and set aside.
