  • 1 (14-ounce) can sweetened condensed milk
  • 1 cup heavy cream
  • 1 ripe mango, peeled and diced

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the whole milk. Mix until just combined and smooth.
  5. Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan.
  6. In a separate bowl, whisk together the evaporated milk and sweetened condensed milk. Once the cake is cool, poke holes all over the top using a fork or skewer.
  7. Slowly pour the milk mixture over the cake, ensuring it seeps into the holes. Cover and refrigerate for at least 2 hours, or overnight for best results.
  8. Before serving, whip the heavy cream until soft peaks form. Spread or pipe the whipped cream over the top of the cake. Top with diced mango and garnish with fresh mint leaves if desired.
