2 large boneless, skinless chicken breasts (about 1 pound total)
Preheat your grill or stovetop grill pan over medium-high heat.
In a small bowl, mix together the salt, black pepper, garlic powder, olive oil, lemon juice, and lemon zest.
Coat the chicken breasts with the lemon-dill marinade, ensuring they are evenly covered. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing.
In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives. Toss gently to mix.
To serve, divide the quinoa mixture among bowls, top with sliced chicken, a dollop of Greek yogurt, and garnish with fresh dill sprigs.

For added flavor, consider marinating the chicken overnight.
