  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and rinse under cold water to cool. Set aside.
  2. In a large mixing bowl, combine the corn, red bell pepper, red onion, cilantro, and feta cheese.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
