Ingredients
Scale
8 ounces spaghetti
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
1 cup diced bell peppers (red, green, or a mix)
1 cup diced onion
1 can (14.5 ounces) diced tomatoes, undrained
1 cup chicken broth
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped fresh parsley (optional)
Instructions
Cook the spaghetti according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, garlic powder, onion powder, paprika, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
Stir in the diced tomatoes and chicken broth. Bring to a simmer and cook for 5 minutes.
Reduce the heat to low and add the cooked spaghetti, cheddar cheese, and sour cream. Stir until the cheese is melted and everything is well combined. Cook for another 2-3 minutes until heated through.
Garnish with chopped parsley if desired and serve warm.
Notes
For a spicier kick, add diced jalapeños or a pinch of cayenne pepper while cooking the chicken.
Substitute the chicken with cooked shrimp or ground turkey for a different protein option.
