Pineapple Chicken Kabobs are a delicious and flavorful grilling option that combines tender chicken with sweet pineapple and colorful vegetables.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple, cut into 1-inch cubes
  • 1 bell pepper (red or green), cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill to medium-high heat.
  2. In a bowl, whisk together the soy sauce, honey, olive oil, apple cider vinegar, garlic powder, ground ginger, salt, and pepper.
  3. Add the chicken cubes to the marinade and let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. Thread the marinated chicken, pineapple, bell pepper, and onion onto the skewers, alternating between each ingredient.
  5. Place the kabobs on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Remove from the grill and let rest for a few minutes before serving.

Notes

  • For a spicier kick, add sliced jalapeños or a sprinkle of red pepper flakes to the marinade.
  • Substitute shrimp or tofu for the chicken for a different protein option, adjusting the cooking time as needed.
