- 1 pound beef fillet, trimmed
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/4 cup white wine vinegar
- 1/4 cup dry white wine
- 1 tablespoon shallots, finely chopped
- 1/2 teaspoon dried tarragon
- 1/2 teaspoon fresh lemon juice
- 2 large egg yolks
- 1/2 cup unsalted butter, melted
- Salt and pepper to taste
- Preheat your oven to 400°F.
- Season the beef fillet generously with salt and pepper.
- In an oven-safe skillet, heat the olive oil over medium-high heat.
- Sear the beef fillet for 3-4 minutes on each side until browned.
- Add the butter to the skillet and transfer it to the preheated oven.
- Roast for about 10-15 minutes for medium-rare, or until your desired doneness is reached.
- Remove from the oven and let it rest for 5-10 minutes before slicing.
- While the beef is resting, prepare the Béarnaise sauce.
- In a small saucepan, combine the white wine vinegar, white wine, shallots, tarragon, and lemon juice. Simmer over medium heat until reduced by half.
- Remove from heat and let it cool slightly.
- In a mixing bowl, whisk the egg yolks until frothy.
- Gradually add the reduced vinegar mixture while whisking continuously.
- Place the bowl over a pot of simmering water (double boiler) and whisk until the mixture thickens.
- Slowly drizzle in the melted butter while whisking until smooth.
- Season with salt and pepper to taste.
- Slice the beef fillet and serve it drizzled with the Béarnaise sauce.
Notes
- For a richer flavor, add a teaspoon of Dijon mustard to the Béarnaise sauce.
- Serve with roasted vegetables or a fresh salad for a complete meal.
