A delicious and impressive dish featuring a perfectly cooked beef fillet paired with a rich and creamy Béarnaise sauce.

Ingredients

  • 1 pound beef fillet, trimmed
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/4 cup white wine vinegar
  • 1/4 cup dry white wine
  • 1 tablespoon shallots, finely chopped
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon fresh lemon juice
  • 2 large egg yolks
  • 1/2 cup unsalted butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Season the beef fillet generously with salt and pepper.
  3. In an oven-safe skillet, heat the olive oil over medium-high heat.
  4. Sear the beef fillet for 3-4 minutes on each side until browned.
  5. Add the butter to the skillet and transfer it to the preheated oven.
  6. Roast for about 10-15 minutes for medium-rare, or until your desired doneness is reached.
  7. Remove from the oven and let it rest for 5-10 minutes before slicing.
  8. While the beef is resting, prepare the Béarnaise sauce.
  9. In a small saucepan, combine the white wine vinegar, white wine, shallots, tarragon, and lemon juice. Simmer over medium heat until reduced by half.
  10. Remove from heat and let it cool slightly.
  11. In a mixing bowl, whisk the egg yolks until frothy.
  12. Gradually add the reduced vinegar mixture while whisking continuously.
  13. Place the bowl over a pot of simmering water (double boiler) and whisk until the mixture thickens.
  14. Slowly drizzle in the melted butter while whisking until smooth.
  15. Season with salt and pepper to taste.
  16. Slice the beef fillet and serve it drizzled with the Béarnaise sauce.

Notes

  • For a richer flavor, add a teaspoon of Dijon mustard to the Béarnaise sauce.
  • Serve with roasted vegetables or a fresh salad for a complete meal.
