- 1 cup shredded sharp cheddar cheese
- 1/2 cup pitted olives, chopped (green or black)
- 1/4 cup fresh parsley, chopped
- 1 cup milk
- 1/3 cup olive oil
- 2 large eggs
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.
- Stir in the shredded cheddar cheese, chopped olives, and parsley until evenly distributed.
- In a separate bowl, whisk together the milk, olive oil, and eggs until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
- Transfer the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
