  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup pitted olives, chopped (green or black)
  • 1/4 cup fresh parsley, chopped
  • 1 cup milk
  • 1/3 cup olive oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.
  3. Stir in the shredded cheddar cheese, chopped olives, and parsley until evenly distributed.
  4. In a separate bowl, whisk together the milk, olive oil, and eggs until smooth.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
  6. Transfer the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
