Savory Goat Cheese and Walnut Tarts are a delightful appetizer featuring a flaky crust filled with a creamy goat cheese mixture and topped with crunchy walnuts and a drizzle of honey.

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 3 to 4 tablespoons cold water
  • 4 ounces goat cheese, softened
  • 1/4 cup heavy cream
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/2 cup walnuts, chopped
  • 1 tablespoon honey
  • Fresh thyme leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
  3. Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles to fit your tartlet pans or a muffin tin. Press the dough into the pans and prick the bottoms with a fork.
  4. Bake the crusts in the preheated oven for 10-12 minutes or until lightly golden. Remove from the oven and let cool slightly.
  5. In a separate bowl, whisk together the goat cheese, heavy cream, egg, black pepper, and dried thyme until smooth.
  6. Spoon the goat cheese mixture into the cooled tart shells, filling them about 3/4 full.
  7. Sprinkle the chopped walnuts on top of the cheese mixture and drizzle with honey.
  8. Return the tarts to the oven and bake for an additional 15-20 minutes, or until the filling is set and lightly browned.
  9. Remove from the oven and let cool for a few minutes before serving. Garnish with fresh thyme leaves if desired.

Notes

  • For a different flavor, try adding sautéed spinach or caramelized onions to the goat cheese mixture.
  • Substitute the walnuts with pecans or almonds for a different nutty flavor.
