Shakshouka Toast is a delicious and flavorful dish featuring poached eggs in a spiced tomato sauce, served on crusty bread.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced (red or green)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (14.5 ounces) diced tomatoes
  • 4 large eggs
  • Salt and pepper to taste
  • 4 slices of crusty bread (such as sourdough or ciabatta)
  • Fresh parsley or cilantro, chopped (for garnish)
  • Feta cheese, crumbled (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  2. Stir in the minced garlic, cumin, and smoked paprika, and cook for an additional minute until fragrant.
  3. Pour in the diced tomatoes with their juices, and season with salt and pepper. Simmer for about 10 minutes, allowing the sauce to thicken slightly.
  4. Make four small wells in the tomato mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  5. While the eggs are cooking, toast the slices of bread until golden brown.
  6. To serve, place a slice of toast on a plate, spoon the shakshouka mixture over the top, and garnish with fresh herbs and feta cheese if desired.

Notes

  • For a spicy kick, add a pinch of red pepper flakes or diced jalapeños to the tomato mixture.
  • You can substitute the eggs with scrambled tofu for a vegan version, or add cooked sausage or bacon for extra protein.
