For the Celeriac Mash
  • 1 medium Celeriac Peeled and chopped.
  • 2 tablespoons Butter or Olive Oil Choose for richness.
  • 1/4 cup Cream or Milk Optional for texture.

For the Sautéed Greens
  • 4 cups Seasonal Greens Spinach, kale, or chard.
  • 2 tablespoons Olive Oil or Butter
  • 2 cloves Garlic or Shallots Optional.

Method
 

Steps to Prepare
  1. Pat duck legs dry with paper towels and season with salt and pepper. Marinate for at least three hours or overnight.
  2. In a saucepan, combine orange juice, honey or syrup, soy sauce, and minced garlic. Simmer for 5-7 minutes until thickened.
  3. Peel and chop celeriac, cook in boiling salted water for 15-20 minutes until fork-tender, then mash with butter and cream.
  4. Preheat air fryer to 400°F (200°C). Cook marinated duck legs for 1 hour and 15 minutes, flipping halfway through.
  5. In a skillet, heat olive oil, sauté greens for 3-5 minutes until tender, and season with salt and pepper.
  6. Plate celeriac mash, add duck on top, drizzle with glaze, and serve with sautéed greens.
