Steps to Prepare
- Pat duck legs dry with paper towels and season with salt and pepper. Marinate for at least three hours or overnight.
- In a saucepan, combine orange juice, honey or syrup, soy sauce, and minced garlic. Simmer for 5-7 minutes until thickened.
- Peel and chop celeriac, cook in boiling salted water for 15-20 minutes until fork-tender, then mash with butter and cream.
- Preheat air fryer to 400°F (200°C). Cook marinated duck legs for 1 hour and 15 minutes, flipping halfway through.
- In a skillet, heat olive oil, sauté greens for 3-5 minutes until tender, and season with salt and pepper.
- Plate celeriac mash, add duck on top, drizzle with glaze, and serve with sautéed greens.
