- In a large mixing bowl, combine tahini, red wine vinegar, fresh lemon juice, minced garlic, and za'atar, along with a pinch of salt and pepper. Whisk until smooth.
- Reserve a portion of the tahini marinade. Coat the chicken thighs thoroughly with the remaining marinade. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour.
- Preheat your oven to 400°F (200°C) and prepare your baking sheet lined with parchment paper.
- Place marinated chicken thighs, skin-side up, on the prepared baking sheet and bake for approximately 35 minutes, until golden-brown and cooked through.
