Preheat the oven to 400°F. Line a baking sheet with parchment paper.
On a lightly floured surface, roll out the puff pastry sheet to smooth it out. Cut the pastry into 6 equal rectangles.
In a small bowl, mix the softened goat cheese, honey, and thyme (if using) until well combined.
Spread a thin layer of the goat cheese mixture onto the center of each pastry rectangle. Place 2-3 blackberries on top of the cheese mixture.
Fold the edges of the pastry over the filling to create a twist shape, pinching the edges to seal them. Place the twists on the prepared baking sheet.
Brush the tops of the twists with the beaten egg and sprinkle with granulated sugar.
Bake for 15-20 minutes or until the pastry is golden brown and puffed. Allow to cool slightly before serving.
