Ingredients
  

  • 2 cups fresh blueberries
  • 1 cup granulated sugar divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 8 ounces cream cheese softened
  • 1 large egg
  • 1 teaspoon lemon zest

Method
 

  1. Preheat the oven to 350°F. Grease an 8x8-inch baking dish.
  2. In a medium bowl, combine the blueberries, 1/4 cup of sugar, lemon juice, and vanilla extract. Gently toss and set aside to marinate.
  3. In another bowl, mix the flour, oats, remaining 3/4 cup sugar, melted butter, cinnamon, and salt until crumbly. Reserve 1 cup of this mixture for topping.
  4. Press the remaining mixture into the bottom of the prepared baking dish to form the crust. Bake for 10 minutes, then remove from the oven.
  5. In a mixing bowl, beat the softened cream cheese until smooth. Add the egg, remaining 1/4 cup sugar, and lemon zest, mixing until well combined. Spread the cream cheese mixture over the baked crust.
  6. Evenly distribute the marinated blueberries over the cream cheese layer. Sprinkle the reserved crumb mixture on top.
  7. Return the dish to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the cheesecake is set. Allow to cool completely before cutting into bars.
  8. Serve chilled or at room temperature.
