Braised Short Ribs in Creamy Herb Sauce is a must-try dish featuring tender beef short ribs cooked in a rich and creamy herb sauce.

Ingredients
  

  • 3 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves or 1 teaspoon dried thyme
  • 2 teaspoons fresh rosemary chopped (or 1 teaspoon dried rosemary)
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 325°F (163°C).
  2. Season the short ribs with salt and pepper. In a large Dutch oven, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.
  3. In the same pot, add the diced onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the beef broth, red wine, tomato paste, thyme, and rosemary. Bring the mixture to a simmer.
  5. Return the short ribs to the pot, making sure they are submerged in the liquid. Cover the pot with a lid and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
  6. Once the ribs are done, remove them from the pot and set aside. Strain the cooking liquid into a saucepan, discarding solids.
  7. Bring the strained liquid to a simmer over medium heat. Stir in the heavy cream and Dijon mustard, cooking until slightly thickened, about 5-7 minutes.
  8. Return the short ribs to the sauce to warm through. Serve garnished with fresh parsley.

Notes

  • For a richer flavor, add a tablespoon of Worcestershire sauce to the braising liquid.
