Preparation Steps
  1. Start by rinsing the fresh strawberries under cool water, gently patting them dry with a clean towel. Carefully hull each strawberry, leaving a firm base, and scoop out a small amount of the insides to create a little cup.
  2. In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, heavy cream, and lemon juice. Blend on medium speed until smooth and creamy, about 2–3 minutes.
  3. Transfer the creamy cheesecake mixture into a piping bag and fill each hollowed strawberry cup with the cheesecake filling.
  4. Sprinkle cookie crumbs on top of each filled strawberry for added texture and flavor.
  5. Place the filled strawberries on a serving platter and refrigerate them for about 10 minutes.
  6. Sprinkle a thin layer of granulated sugar over the tops of the filled strawberries and caramelize the sugar with a kitchen torch.
