- Start by rinsing the fresh strawberries under cool water, gently patting them dry with a clean towel. Carefully hull each strawberry, leaving a firm base, and scoop out a small amount of the insides to create a little cup.
- In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, heavy cream, and lemon juice. Blend on medium speed until smooth and creamy, about 2–3 minutes.
- Transfer the creamy cheesecake mixture into a piping bag and fill each hollowed strawberry cup with the cheesecake filling.
