Ingredients
  

  • 1 bag 12 oz tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup black beans rinsed and drained
  • 1 cup diced tomatoes
  • 1/2 cup sliced jalapeños fresh or pickled
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 avocado diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. On a large baking sheet, spread out the tortilla chips in an even layer.
  3. Sprinkle the shredded cheddar cheese evenly over the chips.
  4. Top the cheese with black beans, diced tomatoes, and jalapeños.
  5. In a small bowl, mix the ground cumin, chili powder, salt, and pepper. Sprinkle this spice mixture over the nachos.
  6. Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a couple of minutes.
  8. Top with diced avocado, sour cream, and chopped cilantro before serving.
