Step-by-Step Instructions
  1. Melt 2 tablespoons of butter in a skillet over medium-high heat. Add shrimp, cooking for 2 minutes on one side. Flip and cook for another minute. Remove shrimp and set aside.
  2. In the same skillet, pour in ½ cup of white wine (or broth) and juice of one lime. Simmer for about 2 minutes.
  3. Add zucchini noodles to the skillet and cook for around 2 minutes until tender. Season with salt and pepper.
  4. Return shrimp to the skillet, adding lime zest and chopped cilantro. Toss to combine and heat through.
