Step-by-Step Instructions
  1. Preheat your Dutch oven over medium heat. Add olive oil and warm for a minute. Season the chuck roast with salt and pepper, then sear on all sides for 10-12 minutes until golden brown. Remove and set aside.
  2. Add more olive oil if needed, add sliced yellow onions, and season with salt and pepper. Cook over medium heat for 5 minutes, then lower heat and caramelize for an additional 20 minutes until golden brown.
  3. Mix in minced garlic and maple syrup (or brown sugar) and cook for 7-8 minutes. Sprinkle flour, stir well, and deglaze with red wine (or beef stock).
  4. Return the seared roast to the pot, add beef stock, rosemary, and bay leaf. Bring to a simmer, cover, and braise in the oven at 300°F for 3 hours.
  5. Uncover and turn the roast over, breaking it into large pieces. Cover and braise for an additional 30-45 minutes until fork-tender. Let it cool before slicing.
