  • 4 cloves Garlic Minced; fresh is better but garlic powder can be used
  • 4 cups Low-Sodium Vegetable Broth Chicken broth is an alternative
  • 1 can Diced Tomatoes Canned and undrained; fresh can also be used
  • 2 tablespoons Olive Oil Vegetable oil can substitute
  • 1 tablespoon Italian Seasoning Can substitute with dried basil, oregano, and thyme

Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium heat until shimmering. Add diced yellow onion and sauté for about 5 minutes until translucent.
  2. Crumble in lean turkey sausage and stir into the sautéed onions. Cook for about 6–8 minutes until browned and cooked through.
  3. Stir in minced garlic and Italian seasoning. Sauté for about 1 minute until the garlic becomes fragrant.
  4. Pour in vegetable broth, add undrained diced tomatoes and drained white beans. Stir in chopped fresh kale and bring to a gentle boil.
  5. Reduce heat to low and let the soup simmer uncovered for about 20 minutes, stirring occasionally.
  6. Taste the soup and adjust seasoning with salt and pepper. Serve hot with crusty bread or salad.
