- Preheat the oven to 450°F (230°C).
- Brush both sides of corn tortillas with canola oil and arrange them on a baking sheet.
- Bake tortillas for about 10 minutes, flipping halfway through.
- In a saucepan over medium heat, combine shredded chicken, salsa, taco seasoning, corn, and black beans. Heat through for about 5 minutes.
- Top each tortilla with approximately 1/2 cup of the warm chicken mixture.
- Sprinkle about 1/4 cup of shredded cheese over each topped tortilla.
- Return the topped tortillas to the oven and bake for an additional 5 minutes.
- Garnish with fresh cilantro and diced tomatoes. Serve immediately.
