  • 3 cups Rotisserie Chicken Shredded.
  • 2 tablespoons Taco Seasoning Can use homemade for an extra touch.
For the Toppings
  • 1 can Canned Black Beans Rinse to avoid sogginess.
  • 1 cup Corn Canned or frozen.
  • 1 cup Cheese Shredded, cheddar or Mexican blend.
  • 1 cup Fresh Toppings Such as cilantro and diced tomatoes.
  • 1 piece Lime For squeezing over the tostadas.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 450°F (230°C).
  2. Brush both sides of corn tortillas with canola oil and arrange them on a baking sheet.
  3. Bake tortillas for about 10 minutes, flipping halfway through.
  4. In a saucepan over medium heat, combine shredded chicken, salsa, taco seasoning, corn, and black beans. Heat through for about 5 minutes.
  5. Top each tortilla with approximately 1/2 cup of the warm chicken mixture.
  6. Sprinkle about 1/4 cup of shredded cheese over each topped tortilla.
  7. Return the topped tortillas to the oven and bake for an additional 5 minutes.
  8. Garnish with fresh cilantro and diced tomatoes. Serve immediately.
