Step-by-Step Instructions
  1. Begin by grating the zucchini using a box grater or food processor. Once grated, transfer it to a clean cheesecloth and squeeze out as much moisture as possible.
  2. In a mixing bowl, combine the grated zucchini with a large egg, freshly grated Parmesan, cornstarch, salt, and pepper. Stir until the mixture is dough-like.
  3. Heat a non-stick skillet over medium heat and add fresh churned garlic butter until melted.
  4. Use a large spoon to portion the zucchini mixture into patties in the skillet, shaping them as needed.
  5. Fry the patties for 3-4 minutes until golden brown, then flip and cook the other side for an additional 3-4 minutes.
  6. Once both patties are golden, place shredded cheddar on one patty and top with the second to create a sandwich. Cook for another 2-3 minutes until the cheese melts.
  7. Remove the sandwich from the skillet, let it cool for a minute, then slice in half to serve hot.
