- Begin by grating the zucchini using a box grater or food processor. Once grated, transfer it to a clean cheesecloth and squeeze out as much moisture as possible.
- In a mixing bowl, combine the grated zucchini with a large egg, freshly grated Parmesan, cornstarch, salt, and pepper. Stir until the mixture is dough-like.
- Heat a non-stick skillet over medium heat and add fresh churned garlic butter until melted.
- Use a large spoon to portion the zucchini mixture into patties in the skillet, shaping them as needed.
- Fry the patties for 3-4 minutes until golden brown, then flip and cook the other side for an additional 3-4 minutes.
