Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar on medium speed for about 2-3 minutes.
  3. Add in the egg and vanilla extract, beating until fully combined and smooth for another 1-2 minutes.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt, then gradually add this to the wet ingredients while mixing on low speed.
  5. Fold in 2/3 cup of semi-sweet chocolate chips using a spatula.
  6. Scoop out 8 dough balls and place them onto the prepared baking sheet, spaced 2 inches apart.
  7. Top each dough ball with additional chocolate chips and flatten them to about 1 inch thick.
  8. Bake for approximately 10 minutes, until the edges are set but centers look underbaked.
  9. Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
