- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar on medium speed for about 2-3 minutes.
- Add in the egg and vanilla extract, beating until fully combined and smooth for another 1-2 minutes.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt, then gradually add this to the wet ingredients while mixing on low speed.
- Fold in 2/3 cup of semi-sweet chocolate chips using a spatula.
- Scoop out 8 dough balls and place them onto the prepared baking sheet, spaced 2 inches apart.
- Top each dough ball with additional chocolate chips and flatten them to about 1 inch thick.
- Bake for approximately 10 minutes, until the edges are set but centers look underbaked.
- Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
