Ingredients
  

For the Taco Filling
  • 1 pound Ground Beef or ground turkey for a lower-fat option
  • 1 medium White Onion or red onion for color
  • 2 cloves Garlic fresh preferred
  • 1 can Canned Fire Roasted Diced Tomatoes or regular diced tomatoes
  • 1 tablespoon Chili Powder adjust to taste
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder optional
  • 1 teaspoon Onion Powder optional
  • to taste Salt
  • to taste Black Pepper
For the Sweet Potatoes
  • 4 medium Sweet Potatoes similar size for even cooking
  • 2 tablespoons Olive Oil or any cooking oil
For the Toppings
  • 1 cup Guacamole
  • 1 cup Cheddar Cheese or dairy-free alternative
  • 1 cup Pico de Gallo
  • 1 cup Sour Cream

Method
 

Preparation
  1. Preheat oven to 425°F (220°C). Wash and scrub sweet potatoes thoroughly, poke holes in each, rub with olive oil, and season with salt and pepper.
  2. Arrange sweet potatoes on a parchment-lined baking pan and bake for 40-45 minutes until tender.
Filling
  1. Heat olive oil in a skillet over medium heat, sauté garlic and onion for 3-4 minutes.
  2. Add ground beef, cooking until browned (5-7 minutes).
  3. Stir in chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add diced tomatoes and simmer for 5-7 minutes.
Assembly
  1. When sweet potatoes are cooked, slice open and fluff insides with a fork. Spoon taco filling generously into each potato.
  2. Garnish with guacamole, cheddar cheese, pico de gallo, and sour cream before serving.
