Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add 12 ounces of spaghetti or linguine and cook until al dente, about 8-10 minutes. Reserve 1.5 cups of pasta water, then drain.
  2. Pat 1 pound of salmon dry, season with salt and pepper. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear salmon for 3-4 minutes on each side until it flakes easily.
  3. In the same skillet, reduce heat to medium, add 2 tablespoons of butter and 3 minced garlic cloves. Sauté until fragrant, about 1 minute.
  4. Add the drained pasta to the skillet, pour in reserved pasta water and half of 1/2 cup of grated cheese. Toss to emulsify into a creamy sauce.
  5. Add more reserved pasta water gradually until desired sauce consistency is reached.
  6. Gently fold in flaked salmon and 1/4 cup of dill, adjusting seasoning as needed.
  7. Serve immediately, garnishing with extra cheese and dill.
