  • 1 cup Bell Peppers diced, use a mix for color
  • 1 cup Tomato Sauce
  • 1/2 cup Green Olives sliced
  • 1/4 cup Raisins adjust to taste
  • 1 tsp Ground Cumin
  • 1 tsp Paprika smoked or sweet
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper to taste
  • 1/4 cup Fresh Cilantro for garnish
  • 2 cups Cooked White Rice to serve
  • 1 Lime Wedges for serving

Step-by-Step Instructions
  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the finely chopped onion and minced garlic, sauté for about 2–3 minutes until translucent and fragrant.
  3. Introduce the ground chicken, cook for 5–6 minutes until no pink remains and golden brown.
  4. Sprinkle in the ground cumin, paprika, salt, and black pepper; cook for another minute.
  5. Stir in the diced bell peppers, tomato sauce, sliced green olives, and raisins; bring to a gentle simmer.
  6. Cover and reduce heat to low, simmer for about 10 minutes.
  7. Serve over cooked white rice, garnish with cilantro and lime wedges.
