- In a large skillet, heat olive oil or butter over medium-low heat. Add thinly sliced onions and a pinch of salt, sauté for 20-30 minutes until golden brown.
- Season the steak with salt and pepper. Preheat a separate skillet over high heat, add oil, and sear the steak for 3-5 minutes per side.
- After resting the steak, spread caramelized onions on it. Sprinkle cheese over the onions. Roll the steak tightly and secure with kitchen twine.
- Slice the rolled steak into 1-inch thick pinwheels. Preheat oven to 375°F (190°C) and arrange pinwheels on a baking tray. Bake for about 15 minutes.
- Remove pinwheels from the oven. Allow to cool slightly and serve warm, garnished with fresh herbs.
