Method
 

Step-by-Step Instructions
  1. In a large skillet, heat olive oil or butter over medium-low heat. Add thinly sliced onions and a pinch of salt, sauté for 20-30 minutes until golden brown.
  2. Season the steak with salt and pepper. Preheat a separate skillet over high heat, add oil, and sear the steak for 3-5 minutes per side.
  3. After resting the steak, spread caramelized onions on it. Sprinkle cheese over the onions. Roll the steak tightly and secure with kitchen twine.
  4. Slice the rolled steak into 1-inch thick pinwheels. Preheat oven to 375°F (190°C) and arrange pinwheels on a baking tray. Bake for about 15 minutes.
  5. Remove pinwheels from the oven. Allow to cool slightly and serve warm, garnished with fresh herbs.
