Preparation Steps
  1. In a mixing bowl, whisk together ¼ cup of milk and 2 eggs until well combined.
  2. Add 1 cup of panko breadcrumbs, ½ cup of grated Parmesan cheese, 1 tablespoon of dried Italian seasoning, and a pinch of salt and pepper to the bowl.
  3. Heat 2 tablespoons of olive oil in a small skillet and sauté 4 minced garlic cloves for 1-2 minutes.
  4. Stir in the sautéed garlic and ¼ cup of chopped fresh parsley into the breadcrumb mixture.
  5. Gently fold in 1 pound of ground chicken, being careful not to overmix.
  6. Preheat your oven to 350°F (175°C).
  7. Grease a 9x5 inch loaf pan with olive oil or non-stick cooking spray.
  8. Transfer the chicken mixture to the loaf pan, smoothing it into an even shape.
  9. Mix together 2 tablespoons of melted butter and 1 tablespoon of garlic powder, then brush over the meatloaf.
  10. Sprinkle ¼ cup of grated Parmesan cheese over the top.
  11. Pour ¼ cup of chicken broth gently around the meatloaf in the pan.
