Preheat your oven to 425°F (220°C).
In a large bowl, combine the sweet potato wedges, olive oil, minced garlic, paprika, salt, and black pepper. Toss until the wedges are evenly coated.
Spread the sweet potato wedges in a single layer on a baking sheet lined with parchment paper.
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the wedges are golden brown and tender.
Remove from the oven and immediately sprinkle the grated Parmesan cheese over the hot wedges. Return to the oven for an additional 5 minutes to melt the cheese.
Once done, remove from the oven and garnish with fresh parsley if desired. Serve hot.
