Preparation
- Begin by thoroughly preparing your ingredients. Mince the garlic, finely chop the shallot, and cube the mozzarella into bite-sized pieces.
- Take the chicken fillets and rub them with salt, pepper, garlic powder, and sweet paprika. Let them sit for a few minutes.
Cooking
- Heat olive oil and butter in a skillet over medium-high heat. Sear chicken until golden brown, about 5 minutes per side.
- Remove chicken and cover with foil to keep warm. In the same skillet, sauté minced garlic and chopped shallot for about 2 minutes.
- Deglaze the skillet with white wine, scraping up brown bits, then stir in seasonings and tomato paste.
- Add chicken broth and canned tomatoes to the sauce, bring to a boil, then simmer for about 5 minutes.
- Nestle the chicken back into the sauce, top with basil and mozzarella, and allow everything to simmer together for 5 more minutes.
