For the Chicken
  • 4 fillets skinless, boneless chicken breasts Main protein; use skinless, boneless chicken breasts for tenderness.
  • to taste teaspoon salt Enhances flavor; adjust according to dietary needs and personal preference.
  • to taste teaspoon black pepper Adds heat; freshly ground pepper is recommended for deeper flavor.
  • 1 teaspoon garlic powder Provides savory flavor; fresh garlic offers a punchier taste.
For the Sauce
  • 1 teaspoon sweet paprika Adds mild sweetness and color; can be substituted with smoked paprika for an earthy twist.
  • 2 tablespoons olive oil For sautéing the chicken; avocado oil can be used for a higher smoke point.
  • 1 tablespoon unsalted butter Adds richness; use salted butter and adjust added salt if needed.
  • 1 medium shallot For sweetness and mild onion flavor; yellow onion is a good substitute.
  • 3 cloves garlic Fresh aromatic flavor; adjust quantity based on your garlic preference.
  • 1/2 cup dry white wine Adds acidity to the sauce; can be replaced with additional chicken broth for a non-alcoholic option.
  • 1 tablespoon dried basil Provides herbaceous notes; fresh basil can be substituted as available.
For the Base
  • 2 tablespoons tomato paste Concentrated flavor and thickness; substitute with extra diced tomatoes for a chunkier sauce.

  • 1 can canned cherry tomatoes Base of the sauce; cherry tomatoes provide a sweeter taste.
For the Finish

Preparation
  1. Begin by thoroughly preparing your ingredients. Mince the garlic, finely chop the shallot, and cube the mozzarella into bite-sized pieces.

Cooking
  1. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken until golden brown, about 5 minutes per side.
  2. Remove chicken and cover with foil to keep warm. In the same skillet, sauté minced garlic and chopped shallot for about 2 minutes.
  3. Deglaze the skillet with white wine, scraping up brown bits, then stir in seasonings and tomato paste.
  4. Add chicken broth and canned tomatoes to the sauce, bring to a boil, then simmer for about 5 minutes.
  5. Nestle the chicken back into the sauce, top with basil and mozzarella, and allow everything to simmer together for 5 more minutes.
  6. Serve hot, alongside pasta, ciabatta, or salad.
