Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup Caesar dressing
  • 1/2 cup croutons
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, onion powder, salt, and pepper. Brush this mixture onto both sides of the chicken breasts.
  3. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
  4. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, and Caesar dressing. Toss until the lettuce is well coated.
  5. Divide the salad among four plates. Top each salad with sliced grilled chicken, croutons, Parmesan cheese, and a drizzle of fresh lemon juice.
  6. Serve immediately and enjoy!
