  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
  3. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. Lightly oil the grill grates to prevent sticking. Place the salmon fillets skin-side down on the grill.
  5. Grill the salmon for about 6-8 minutes per side, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F.
  6. Remove the salmon from the grill and let it rest for a few minutes. Serve with lemon wedges and garnish with fresh parsley.
