Step-by-Step Instructions
  1. Season the steaks with kosher salt and crushed whole peppercorns, then let rest for 30 minutes.
  2. Preheat grill to medium-high and char the green onions for 3-4 minutes.
  3. In a cast-iron pan, sauté diced bacon until crispy; set aside with charred scallions.
  4. Mix bacon, fat, scallions, minced garlic, parsley, cilantro, lemon juice, and reserved peppercorns in a bowl.
  5. Grill the steaks for 3-4 minutes on each side until a brown crust forms; aim for medium-rare.
  6. Wrap grilled steaks in butcher paper or foil, rest for 10 minutes, then serve with herbed mixture and chives.
