- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds and membranes. Place peppers upright in a baking dish.
- Sauté chopped onions in oil until translucent, about 3–4 minutes. Stir in ground beef and cook until browned, about 5–7 minutes.
- Stir in cooked rice and spices, mix thoroughly for about 2–3 minutes until well combined and heated through.
- Fill each pepper with the beef-rice mixture, carving jack-o'-lantern faces on the sides.
- If using cheese, sprinkle it on top of each filled pepper before baking.
- Bake stuffed peppers for 25–30 minutes or until tender and cheese is bubbly, if used.
- Remove from oven, let cool slightly, then garnish with your favorite toppings before serving.
