  • 2 teaspoons Active Dry Yeast check for freshness
  • 2 tablespoons Granulated Sugar honey can be used
  • 1 teaspoon Salt fresh salt preferred
  • 1.5 cups Warm Water between 105-115°F
  • 2 tablespoons Olive Oil melted butter is an alternative
For the Filling
  • 8 oz Cream Cheese ricotta is an alternative
  • 1 cup Shredded Mozzarella Cheese provolone or cheddar can be used
  • 0.5 cup Grated Parmesan Cheese pecorino cheese as substitute
  • 0.25 cup Fresh Italian Parsley can swap with chives or thyme
  • 0.25 cup Chopped Fresh Basil less dried basil is an alternative
  • 0.25 cup Chopped Fresh Oregano dried oregano can be used
  • 2 cloves Garlic (minced) additional garlic enhances flavor
  • 1 teaspoon Red Pepper Flakes optional for heat
For the Finish
  • 1 large Egg for wash
  • 2 tablespoons Milk or Water for wash
  • 2 tablespoons Everything Bagel Seasoning optional topping

Method
 

Preparation Steps
  1. Combine warm water, sugar, and yeast. Let it sit until frothy.
  2. Whisk together flour and salt in a bowl.
  3. Mix activated yeast and olive oil into flour mixture until shaggy dough forms.
  4. Knead the dough for 6-8 minutes on a floured surface until smooth.
  5. Place dough in a greased bowl, cover, and let rise for 1-1.5 hours.
  6. Mix cream cheese, mozzarella, parmesan, herbs, minced garlic, and optional red pepper flakes in another bowl.
  7. Season filling with salt and pepper. Taste to adjust flavor.
  8. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  9. Roll out the dough, spread filling, and roll into a log shape.
  10. Transfer to baking sheet, brush with egg wash, and add toppings.
  11. Bake for 25-30 minutes until golden brown and filling is melty.
  12. Cool on a wire rack for 10 minutes before slicing.
