  • 1 lb Italian Sausage or chicken sausage or vegetarian crumbles
  • 1 Onion finely diced
  • 5-6 Garlic minced
  • Salt & Black Pepper to taste
  • 1.5 cans Tomato Paste two 6 oz cans
  • 1 can Crushed Tomatoes canned
  • 1 can Tomato Sauce
  • 1 cup Red Wine or broth for a non-alcoholic variant
  • Italian Seasonings pre-mixed or homemade
  • Oregano fresh is best
  • Fennel Seeds optional
  • Fresh Parsley can substitute with basil
For the Cheese Mixture
  • 15 oz Ricotta Cheese or pureed silken tofu for dairy-free
  • 1 cup Romano or Parmesan Cheese grated
  • 1 cup Mozzarella Cheese freshly recommended
  • 1 Egg whisked
For Assembly
  • 12 Lasagna Noodles no-boil or regular

Step-by-Step Instructions
  1. Brown the Meat: In a large saucepan, combine ground beef and Italian sausage over medium-high heat. Cook for 8-10 minutes until no longer pink.
  2. Sauté Aromatics: Add diced onion and minced garlic, sprinkle with salt and pepper, and sauté for 2-3 minutes.
  3. Prepare the Sauce: Stir in tomato paste and cook for 2-3 minutes. Mix in crushed tomatoes, tomato sauce, red wine, oregano, fennel seeds, and parsley. Simmer uncovered for at least 1 hour.
  4. Mix the Cheese Filling: Combine ricotta cheese, grated cheese, whisked egg, and parsley in a bowl.
  5. Cook the Noodles: Boil salted water and par-cook lasagna noodles for 3 minutes. Drain and rinse lightly.
  6. Assemble the Lasagna: Layer meat sauce, noodles, ricotta mixture, and grated cheese in a baking dish.
  7. Finish Assembly: Top with remaining meat sauce and a sprinkle of cheese.
  8. Cover and Bake: Cover the dish with parchment and foil. Bake at 375°F for 30 minutes.
  9. Uncover and Brown: Remove the foil and add more mozzarella. Bake uncovered for 20-25 minutes.
  10. Rest Before Serving: Let the lasagna rest for 20 minutes before slicing.
