Marinade
  • 1/4 cup Olive Oil or avocado oil
  • 1/4 cup Soy Sauce or tamari for gluten-free
  • 2 tablespoons Honey or Agave Syrup or maple syrup for vegan option
  • 2 tablespoons Apple Cider Vinegar or Red Wine Vinegar or lemon juice
  • 1 tablespoon Hot Sauce e.g., Cholula or Tabasco
  • 1 teaspoon Garlic Powder or 2 cloves of fresh minced garlic
Kabobs
  • 3 pounds Thick-cut Steaks such as NY strips, ribeye or sirloin
  • 1 large Red Onion or white onion/shallots
  • 2 medium Bell Peppers any color, can use zucchini or eggplant
  • 1 pound Mushrooms button or cremini, portobello for meaty texture
  • 1 pound Brussels Sprouts or asparagus/cherry tomatoes

Method
 

Preparation Steps
  1. Soak wooden skewers in water for at least 30 minutes.
  2. In a medium bowl, whisk together olive oil, soy sauce, honey, vinegar, hot sauce, and garlic.
  3. Cut thick-cut steaks into 1½ inch cubes and marinate for at least 30 minutes.
  4. Wash and cut vegetables including red onion, bell peppers, mushrooms, and Brussels sprouts.
  5. Assemble kabobs by threading beef and vegetables on soaked skewers.
  6. Preheat the grill to medium heat and grill kabobs for approximately 10 minutes.
  7. Remove from grill and let rest for 3-5 minutes before serving.
