Ingredients
  

  • 1 pound ground beef
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 1 can 10 ounces diced tomatoes with green chilies
  • 1 can 10 ounces cream of chicken soup
  • 1 cup sour cream
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 package 10 ounces tortilla chips
  • 1/4 cup chopped green onions optional
  • 1/4 cup chopped cilantro optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  3. Stir in the black beans, corn, diced tomatoes with green chilies, cream of chicken soup, sour cream, and taco seasoning. Mix well and heat until warmed through.
  4. In a greased 9x13 inch baking dish, layer half of the tortilla chips on the bottom.
  5. Pour half of the beef mixture over the chips, then sprinkle with 1 cup of cheddar cheese.
  6. Repeat the layers with the remaining tortilla chips, beef mixture, and top with the remaining cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven and let it cool for 5 minutes. Garnish with green onions and cilantro if desired before serving.
