  1. Melt 3 tablespoons of unsalted butter in a large skillet over medium heat. Add thinly sliced medium onions and cook for about 8-10 minutes until softened and golden brown. Stir in fresh thyme, kosher salt, and black pepper, then set aside.
  2. Slice sweet rolls horizontally while keeping halves together, creating a sturdy base for the sliders. Set aside on a baking sheet.
  3. Layer sautéed onion mixture on bottom halves of sliced rolls, add provolone cheese, and top with deli roast beef. Cap with top halves of the rolls.
