  • 2 tablespoons Soy Sauce preferably low-sodium
  • 2 tablespoons Sugar adjust to taste

Preparation Steps
  1. In a medium bowl, combine 1/2 cup of white or yellow miso paste, 1/4 cup of mirin, 2 tablespoons of soy sauce, and 2 tablespoons of sugar. Whisk until smooth and creamy.
  2. Place the black cod fillets in a shallow dish, cover with marinade, and refrigerate for 24 to 48 hours.
  3. Preheat grill or broiler to medium-high heat (around 400°F / 200°C) about 30 minutes before cooking.
  4. After marinating, remove the black cod and shake off excess marinade. Allow it to rest at room temperature for 15 minutes.
  5. Place the marinated black cod on the grill or under the broiler. Cook for 6-8 minutes per side until caramelized and flaky.
  6. Serve the cooked black cod on a platter with sides like steamed rice or vegetable stir-fry.
