Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium heat. Add finely chopped onion and sauté for about 5 minutes until translucent. Stir in minced garlic and cook for another minute.
  2. Add sliced cremini mushrooms, stirring frequently for 5 to 7 minutes until tender. Season with a pinch of salt and pepper.
  3. Stir in Arborio rice, ensuring each grain is coated. Toast for about 2 minutes until slightly translucent.
  4. Pour in white wine (if using) and simmer for a couple of minutes until most liquid is absorbed.
  5. Gradually add warm broth one ladle at a time, stirring continuously for 20 to 25 minutes until rice is creamy and al dente.
  6. Reduce heat to low, stir in heavy cream until warmed. Adjust seasoning with salt and pepper.
