  • 1/2 teaspoon Worcestershire Sauce Can be substituted or omitted.

Cooking Steps
  1. Prepare the Steak by taking it out of the refrigerator and letting it sit at room temperature for 15–20 minutes, then season generously with salt and pepper.
  2. Heat the Skillet by adding 2 tablespoons of oil to a large skillet over medium-high heat until shimmering.
  3. Sear the seasoned steak in the hot skillet for 2–4 minutes per side until a rich, brown crust forms.
  4. Let the Steak Rest for about 5 minutes on a cutting board, loosely covered with foil.
  5. Sauté Aromatics by lowering the heat, adding 2 tablespoons of butter, then adding 1 finely diced shallot and 1 chopped garlic clove.
  6. Deglaze the Pan by pouring in 1/2 cup of beef broth and scraping up the flavorful bits stuck to the skillet.
  7. Make the Blue Cheese Sauce by stirring in 1/2 cup of heavy cream, bringing it to a gentle boil, then adding 1/4 cup of crumbled blue cheese.
  8. Finish by adding 1/2 teaspoon of Worcestershire sauce and adjusting seasoning, adding more beef broth if sauce is too thick.
